when i was learning from the chef, we use salt instead of sauce. sauce is only for the colour. we add the salt onto the rice, at a little water and knead them to evenly spread out the saltiness

Can use sambal. Can also use fish sauce too. Can use the heated oil to brown onions / shallots first or brown them with other ingredients first before scooping out the ingredients and putting them aside and then tossing the rice in the flavoured oil, then add in all the cooked ingredients again.

i find that adding the la chang (those chinese waxed suasages) helps. you stir fry them first then use the oil.

fried rice = overnight rice.. lots of fried shallots + the oil it comes in.. bits of fried lard... ridiculous amounts of chinese sausage (fried or grilled before starting).. fried egg.. bits of whatever the heck you have in your fridge (like bits of shrimp, meat, or whatever.. diced)
light soy sauce.. even better if you have fish sauce...
wok must be ridiculously hot.. learn to toss the whole lot about like you see with chinese short order cooks to ensure even cooking..
start with the egg.. ridiculously hot wok, add the aforementioned oil of the shallots... toss beaten egg in it and swirl around until a thin layer is cooked, remove and either smash it up or slice up... toss in more of the abovementioned oil, and some lard.. allow to sizzle for a few seconds, toss in some smashed garlic.. and then immediately toss everything else inside... cook and stir and toss vigorously... add in the egg.. toss vigorously again...
add fried shallots as garnishing..
serve..

Thank you thank you.... just for some reasons my fried rice don't smell and taste as nice as those from restaurant..... some flavour is missing.

I prefer 'Bi Her' actually... it's like a more expensive, more fragrant and less salty category of giam hee.

I add alot of stuff
First fry egg with sesame seed oil
Add garlic
Add in sliced Hotdogs and Luncheon Meat
Add in Green Pea
Add in rice
Add in soy sauce and an indonesian sauce called kecap manis.
