My frank and honest reply to your question.
Use whatever you feel is right for those corners. Usually, I'd play with safety, try using a lower gear. If you feel that there's room for more speed across the corner, then push it up abit more either by using a higher gear at lower RPM, or a lower gear with more throttle. Thats what I do. Usually its your lining that decides what gear you will be using for the corner. If you take the middle lane to turn into the hairpin, then you'd probably end up going slower because you have little room near the exit. This might cause you to downshift.
So go and try out your lining and experiment on your own first. Good luck at it!
